rice bake pizza

last night i tried a new recipe inspired by my brother-in-law who served a 2 year mission in australia and told me he ate a version of this while he was there. all i had to go off of was his description. so here is what i did:
made 1 cup brown rice
made about 1/2 c homemade very simple pesto
-basil, olive oil, fresh lemon juice, garlic, salt and pepper and a tbsp or so roasted sunflower seeds
mixed the pesto with the cooked rice along with some feta (you could use whatever cheese you like)

patted the rice mixture in the bottom of a shallow baking dish. 

added favorite pizza toppings.
mushrooms, onions, peppers, avocado and ham
topped with mozzarella, dried basil and garlic powder even more flavor 

and baked for about 30 minutes or so at 400. 
i think what my bro-in-law ate was more like a pizza. so maybe the rice mixture was blended before patting. i'm not sure. but this was absolutely delicious. i will definitely make it again.
it was like a mix between pizza and a rice bake. so i guess you could call it rice bake pizza!
matt ate his with hot sauce and plain greek yogurt.


tonight after fhe the kids and i made some homamde ice cream. a recipe i found at the diva dish!
it was very yummy. instead of peanut butter i used nutella and we used dark chocolate hershey's syrup. paisley LOVED it as much as i did. emmett could take it or leave it. just like his daddy he is.

for my healthy self challenge today i was suppose to tackle a nagging task. i washed paisley's sheets and cleaned her room. something i have been needing to do for a while. i think that counts!

"bad" food

chocolate sauce on my banana ice cream
dark chocolate raisins
